Braised Beef with Juniper Berries

A rich and aromatic braised beef brisket, slow-cooked until meltingly tender in a deep, flavourful sauce. Infused with red wine, herbs, and the distinctive pine-like warmth of juniper berries, this dish delivers a beautifully balanced depth of flavour. The slow braising process allows the beef to absorb the savoury stock and vegetable base, resulting in a comforting, restaurant-quality dish perfect for hearty main courses. Served with greens and creamy mash, it’s a classic cold-weather favourite.

Ingredients

Increase Portion Size

  •   tsp Country Range Mixed Herbs
  •   Country Range Bay Leaves
  •   tsp Country Range Juniper Berries
  • ml vegetable oil
  •   kg piece of brisket
  •   small diced onion
  •   small diced carrot
  •   stick of diced celery
  • g sliced small leek
  • ml red wine
  • ml beef stock
  •   tsp salt
  •   tsp crushed pepper corns

    Step 1

    Pre heat the oven to 160c / 140c fan
  • 2

    Place the brisket into an oven proof dish that has a tight fitting lid
  • 3

    Add the diced veg, herbs and juniper berries
  • 4

    Add the red wine, beef stock and cover with the lid
  • 5

    Braise in the oven for 3 to 4 hours until tender. Turning the meat every 30 mins and basting with the sauce

    Reduce the sauce to the required thickness and keep warm

    Slice the beef, and gently pour over the sauce.

    Serve with greens and Signature by Country Range Mashed Potatos.
