Make brilliant breakfast bagels with this amazing crispy pancetta and scrambled egg recipe
Ingredients
7 Total- 2 bagels
- 2 Country Range Mature Cheddar Cheese Slices
- 5 g Country Range Butter
- 3 Country Range Free Range Medium Eggs
- 100 g pancetta
- 0.5 tsp salt
- 0.5 tsp pepper
Method

Step 1
Lay the slices of pancetta on a baking tray and grill until crispy. -

Beat 3 eggs together in a small bowl. -

Add a knob of butter to a pan and allow to melt on a medium heat. -

Add the eggs, season with salt and pepper and stir until scrambled. -

Slice the bagels in half and lay out on a baking tray. -

Butter the bagel halves and top with a slice of mature cheddar. -

Add a good helping of the scrambled egg mixture. -

Top with a couple of slices of the crispy pancetta and replace the bagel lid. -

Place in a pre-heated oven (200ºC) for 5-6 minutes. -

Remove from the oven and serve with a strong coffee.
