Make brilliant breakfast bagels with this amazing crispy pancetta and scrambled egg recipe

Ingredients

  • 2 bagels
  • 2 Country Range Mature Cheddar Cheese Slices
  • 5 g Country Range Butter
  • 3 Country Range Free Range Medium Eggs
  • 100 g pancetta
  • 0.5 tsp salt
  • 0.5 tsp pepper

Method

    Step 1

    Lay the slices of pancetta on a baking tray and grill until crispy.

    Step 2

    Beat 3 eggs together in a small bowl.
  • 3

    Step 3

    Add a knob of butter to a pan and allow to melt on a medium heat.
  • 4

    Step 4

    Add the eggs, season with salt and pepper and stir until scrambled.

    Step 5

    Slice the bagels in half and lay out on a baking tray.

    Butter the bagel halves and top with a slice of mature cheddar.

    Add a good helping of the scrambled egg mixture.

    Top with a couple of slices of the crispy pancetta and replace the bagel lid.

    Place in a pre-heated oven (200ºC) for 5-6 minutes.

    Step 10

    Remove from the oven and serve with a strong coffee.
