Brunching is becoming the new norm! Why not rustle up this tasty potato cakes served with smoked salmon and cream cheese.
Ingredients
7 Total- 100 g Country Range Frozen Mashed Potato
- 20 g Country Range Plain Flour
- 25 g Country Range Salted Butter
- 1 spring onion
- 1 Country Range Free Range Medium Egg
- sliced smoked salmon
- 2 lemon wedges
Method

Step 1
Cook the mash as per instructions and mix with an egg, flour and sliced spring onion. -

Split the mix into 4 balls and press to form 4 cakes. -

Heat the butter in a pan and fry the potato cakes until golden on each side. -

Serve warm with a dollop of cream cheese and a wedge of lemon.
