Tomato and Lentil Soup

5 Total- 150 g Country Range Tomato Soup Mix
- 3 pts cold water
- 100 g Country Range Red Lentils
- 1 tbsp thyme, chopped
- crispy strips of bacon to garnish
Method

Step 1
Mix sufficient water with the tomato soup mix to make a smooth paste, blend in the remaining cold water, lentils and thyme. -

Step 2
Bring to the boil, reduce the heat and simmer gently for 20 minutes until the lentils have softened. Stir occasionally to prevent sticking. -

Step 3
Serve hot, in deep bowls garnished with crispy bacon.
