Vegetable Tikka Kebab

  • 25 g Country Range Tikka Curry Paste
  • 25 g Country Range Natural Yogurt
  • 25 ml Country Range Extended Life Vegetable Oil
  • 50 g sweet potato
  • ½ red onion
  • ½ green pepper
  • 6 button mushrooms
  • 4 wooden skewers

Method

    Step 1

    Peel and dice the sweet potato into 3cm squares and steam for 5 minutes.

    Step 2

    Cut the pepper and red onion into 3cm squares and wash the mushrooms.
  • 3

    Step 3

    Marinate all the vegetables in yogurt and tikka paste for 2 hours.
  • 4

    Step 4

    Place the vegetables on skewers as follows; sweet potato, pepper, mushroom and repeat again.

    Step 5

    Cook on an oiled tray in a hot oven at 220oC for 6-8 minutes.

    Step 6

    Serve with Country Range Easy Cook Basmati Rice and Country Range Mango Chutney.
