Ingredients
Increase Portion Size
- g Country Range Grated Cheddar
- small pumpkin/ squash
- ml ready made veg stock
- g butter
- g pesto
- tsp pumpkin seeds
- pinch nutmeg
- season to taste

Step 1
Pre heat the oven to 180c fan /200c -

Step 2
Cut the lid off the squash and remove all the seeds -

Step 3
Place the lid back on top and bake in the oven for 40 mins until the flesh is tender but not falling apart -

Remove from the oven and gently scrape the flesh out and place in a bowl with the butter and cheese. -

Add the veg stock and a pinch of nutmeg and season to taste -

Add the mix back to the warm squash, garnish with pesto, toasted pumpkin seeds and place the lid back on top -

Step 7
Serve with plenty of bread
