Gingerbread Caramel Shortbread
A decadent twist on a classic treat — buttery shortbread forms the base for a luscious layer of ginger-spiced caramel, crowned with smooth dark chocolate and a sprinkle of golden sugar stars. Each bite melts in your mouth, balancing rich sweetness with a warm, festive kick of ginger. Perfect for gifting, sharing, or savouring!

Ingredients
Increase Portion Size
- g Country Range Self-Raising Flour
- tsp Country Range Ground Ginger
- g butter
- g caster sugar
- g golden syrup
- g condensed milk
- shavings 70% dark chocolate
- portion Golden Sugar Stars

Step 1
Crumb the flour, 225g butter and 115g caster sugar to make shortbread. -

Press into tray and bake at 180°C for 20-25 minutes and leave to cool. -

Make into a caramel by melting the 80g sugar, 150g butter and golden syrup and stirring in the condensed milk. Stir through 2 tsp ground ginger. -

Pour the caramel onto cooled shortbread. Leave to set overnight. -

Top with melted 70% Dark chocolate and sprinkle with golden sugar stars. Leave to set in fridge. -

Cut into squares and serve
