Aloo Dum
A hearty celebration of spice and comfort, Aloo Dum is a beloved dish of tender baby potatoes simmered slowly in a vibrant, aromatic gravy. The potatoes are first lightly fried to achieve a golden exterior, allowing them to soak up every layer of flavour as they cook. They’re then gently stewed in a silky sauce made from tomatoes, onions, yoghurt, and a fragrant blend of warming spices—cumin, coriander, Kashmiri chilli, cardamom, and garam masala.

Ingredients
Increase Portion Size
- g peeled and chopped maris pipers
- diced onion diced onion
- finley chopped fresh tomatoes finley chopped fresh tomatoes
- crushed cloves of garlic crushed cloves of garlic
- g ghee
- tbsp Country Range Ground Turmeric
- tbsp Country Range Crushed Chillies
- tbsp Country Range Garam Masala
- tbsp Country Range Wholegrain Mustard
- tbsp fenugreek seeds
- pinch salt & pepper - season to taste
- large sprig of chopped coriander
- sliced green chillis

Step 1
Par boil the large chunks of potatoes in salted boiling water -

In a large pan melt the ghee and add the turmeric, chili flakes, mustard seeds, fenugreek and garam masala and gently fry for 1 minute -

Add the diced onion and garlic and gently fry until soft -

Add the potatoes and chopped tomatoes with 100ml water and gently simmer until the potatoes are tender -

Season with salt to taste, garnish with chopped coriander and sliced green chillis and serve with naan breads and basmati rice
