Increase Portion Size
- ml Country Range Multi-Use Tomato Sauce
- g Country Range Round Grain Rice
- g Country Range Panko Breadcrumbs
- g Country Range Plain Flour
- ml Vegetable Stock
- tbsp Olive Oil
- fine diced shallot
- g fine diced courgette
- fine diced red pepper
- crushed clove garlic
- small handful chopped basil
- eggs, beaten

Step 1
Cook the short grained rice in veg stock until tender, season to taste and allow to cool on a tray -

Gently fry off the shallot, courgette and red pepper until soft, add the basil and tomato sauce, season to taste and allow to cool -

Flatten a small golf ball sized amount of rice and spoon a little of the tomato mix in the centre and wrap the rice around to enclose the filling -

Step 4
Coat each one in flour, then beaten egg, then the bread crumbs. -

Deep fry for 4/6 mins and serve with extra sauce and a grating of parmesan or vegan cheese if you want this dish to be vegan
