Step 1Pre-heat oven to 180°C/350°F/Gas Mark 4.
Step 2Lightly grease 4 pieces of foil which are large enough to loosely wrap around the cod fillets.
Step 3Place a piece of cod on each sheet of foil, dust with salt and pepper.
Step 4Melt butter in a frying pan and cook onion until soft. Stir in the crumbs, parsley, lemon juice and olives. Divide into four and place a portion on top of each piece of cod.
Step 5Wrap the foil loosely around the base of the fish but do not cover the topping.

Step 7Remove from the oven and carefully lift the fish from the foil and place on a serving plate.
- 4 cod fillets
- 90 g Country Range Butter
- 480 g onion, finely chopped
- 300 g fresh breadcrumbs
- 45 parsley, finely chopped
- 30 ml lime or lemon juice
- 300 g Country Range Olives, finely chopped
