Step 1Pre-heat the oven to 140°C.
Step 2Blitz the biscuits and add the melted butter.
Step 3Pour the biscuit mix into a lined spring base cake tin and press to form an even base.
Step 4Put all the other ingredients in a food mixer and mix to a smooth cream.
Step 5Pour over the biscuits and bake for 50 minutes until the top just wobbles.
Step 6Cool and serve.
Step 7You may get a crack on top, that’s ok, it still tastes amazing!
- 500 g Country Range Luxury Full Fat Soft Cheese
- 150 g Country Range Digestive Biscuits
- 50 g Country Range Butter, melted
- 10 g Country Range Cornflour
- 75 g caster sugar
- 3 lemons, juice and zest
- 3 eggs
