Step 1Gently fry the diced onion, carrot, celery and garlic until soft.
Step 2Add the crushed chillies and crushed cumin seeds.
Step 3Add the tomato and basil sauce and bring to a simmer.
Step 4Add the kidney beans and pulled jackfruit and simmer for 5 mins.
Step 5Cook the rice as per pack instructions.
Step 6Finish the jackfruit with the chopped coriander and serve with the rice.
