Step 1Marinate the diced skirt beef in 50g of madras paste for 12 hours or overnight.
Step 2Fry the diced onion in the hot oil and brown off the diced beef in the same pan.
Step 3Add the beef stock, chopped tomatoes and remaining madras paste and simmer for 2 hours until the beef is tender, and the sauce has thickened.
Step 4Serve with Country Range Easy Cook Basmati Rice.

- 150 g Country Range Chopped Tomatoes
- 1 ltr Country Range Beef Bouillon Paste (made up)
- 1 white onion, diced
- 600 g skirt beef, diced
