Step 1Mix the butter, honey and banana flesh until light and fluffy.
Step 2Add the beaten egg and buttermilk.
Step 3Add all the dry mix and blueberries.
Step 4Spoon into muffin cups and bake at 180°C for 12 minutes.
- 2 ripe bananas
- 250 g blueberries
- 300 g Country Range Plain Wholemeal Flour
- 75 g Country Range Butter
- 3 tsp Country Range Baking Powder
- 1 tsp Country Range Bicarbonate of Soda
- 1 Country Range Free Range Medium Egg
- 125 g Country Range Honey or Maple Syrup
- 200 ml buttermilk
