Step 1Finely dice the onion and sweat in the butter.
Step 2Add the cream, bay leaves and cloves and simmer.
Step 3Add the breadcrumbs and stir until thick and creamy.
Step 4Add a splash of water if a little too thick.
Step 5Season with salt and pepper and grate loads of fresh nutmeg.
Step 6Serve with roast poultry or game.

- 700 ml Country Range Whipping Cream
- 10 ea Country Range Cloves
- 3 ea Country Range Bay Leaves
- 75 g Country Range Butter
- 1/2 ea onion (finely diced)
