Buttermilk Fried Chicken
Buttermilk chicken is an amazing deep fried chicken recipe using the NEW Country Range Chicken Breast Fillets
Step 1Remove the inner fillet of the chicken and put to one side to use in another dis.
Step 2Cut the breasts in half horizontally.
Step 3Scallop the breast halves to create 4 pieces per breast.
Step 4Mix the buttermilk, eggs and 1 tbsp of Cajun seasoning in a bowl.
Step 5Add the chicken and marinate for at least an hour or preferably overnight.
Step 6Mix the breadcrumbs, flour and the rest of the Cajun seasoning.
Step 7Remove the chicken from the fridge.
Step 8Coat each chicken piece in the breadcrumb mix.
Step 9Heat the oil in a pan ensuring the temp does not exceed 180ºC.
Step 10Carefully place the chicken in the hot oil and fry for 2-3 minutes on each side.
Step 11Remove the chicken from the pan and repeat if necessary.
Step 12Serve with barbecued corn, wedge of lime and a dipping sauce of your choice.

- 250 ml buttermilk
- 35 g Country Range Blackened Cajun Seasoning
- 75 g Country Range Plain Flour
- 25 g Country Range Breadcrumbs
- 500 ml Country Range Rapeseed Oil
