Caramel, Banana and Rum Tiramisu

Step 1Mix the mascarpone, icing sugar, lime zest and juice and whipping cream to a smooth mix.
Step 2Mix the rum and espressos together.
Step 3In a glass, pipe in some mix.
Step 4Add a few slices of banana.
Step 5Add 3 of the sponge fingers halves.
Step 6Moisten the sponge fingers with the coffee mix.
Step 7Repeat the process and finish with a layer of mascarpone mix.
Step 8Top with a slice of banana.
- 75 g Country Range Mascarpone
- 75 ml Country Range UHT Dairy Whipping Cream
- 20 g icing sugar
- 1 lime
- 1 banana, sliced
- 50 g tin condensed milk caramel
- 20 ml rum
- 4 sponge fingers
- 2 espresso shots (35ml each)
