Courgette and Lemon Cake

Ingredients

  • g Country Range Sultanas
  • g Butter
  • g Demerara sugar
  •   tsp Mixed spice
  •   tsp Vanilla extract
  •   tsp Nutmeg
  •   Eggs
  • g Self Raising Flour
  • g Grated Courgette
  •   Large Lemon (juice and zest)
  • g Caster sugar

    Step 1

    Pre heat the oven to 170c / 150c fan
  • 2

    Cream together the sugar and butter
  • 3

    Step 3

    Add the spices and beat in the eggs 1 by one
  • 4

    Fold in the flour
  • 5

    Add the grated courgette and sultanas
  • 6

    Step 6

    Pour the cake mix into a buttered 2lb loaf tin and bake for 50/60 mins.

    Once the cake is cool enough to handle, remove from the tin and cool fully on a wire rack

    Mix together the lemon juice, zest and caster sugar
  • 9

    Pour over the lemon glaze and leave for 15 mins to set
