- g Country Range Sultanas
- g Butter
- g Demerara sugar
- tsp Mixed spice
- tsp Vanilla extract
- tsp Nutmeg
- Eggs
- g Self Raising Flour
- g Grated Courgette
- Large Lemon (juice and zest)
- g Caster sugar

Step 1
Pre heat the oven to 170c / 150c fan -

Cream together the sugar and butter -

Add the spices and beat in the eggs 1 by one -

Fold in the flour -

Add the grated courgette and sultanas -

Pour the cake mix into a buttered 2lb loaf tin and bake for 50/60 mins. -

Once the cake is cool enough to handle, remove from the tin and cool fully on a wire rack -

Mix together the lemon juice, zest and caster sugar -

Pour over the lemon glaze and leave for 15 mins to set
