Crispy Gherkin and Cheddar Bar Bites

7 Total- 24 Country Range Sliced Gherkins
- 4 Country Range Mature Cheddar Cheese Slices
- 50 g Plain Flour
- 2 Eggs
- 75 g Country Range Panko Breadcrumbs
- 1 tsp Country Range Smoked Paprika
- Season to taste

Step 1
Select 24 even sized gherkin slices and pat dry -

Step 2
Place 2 cheddar slices on top of the other 2 and cut into even sized squares which are the same size as the gherkins. -

Step 3
Sandwich the cheddar between the 2 gherkin slices until you have 12 gherkin and cheddar pieces -

In three separate bowls place the flour in one, the beaten egg in one and the panko breadcrumbs in the last -

Pass each cheesy gherkin through flour, then egg then bread-crumbs, then repeat so they are “double dipped” -

Once you have coated all 12 let them sit for a few minutes to set -

Deep fry in oil for 2/3 mins until golden or drizzle with oil and bake in a 250oC hot oven for 6 mins. -

Serve immediately with a dip of your choice
