Crispy Pancetta and Scrambled Egg Breakfast Bagels
Make brilliant breakfast bagels with this amazing crispy pancetta and scrambled egg recipe
Step 1Lay the slices of pancetta on a baking tray and grill until crispy.
Step 2Beat 3 eggs together in a small bowl.
Step 3Add a knob of butter to a pan and allow to melt on a medium heat.
Step 4Add the eggs, season with salt and pepper and stir until scrambled.
Step 5Slice the bagels in half and lay out on a baking tray.
Step 6Butter the bagel halves and top with a slice of mature cheddar.
Step 7Add a good helping of the scrambled egg mixture.
Step 8Top with a couple of slices of the crispy pancetta and replace the bagel lid.
Step 9Place in a pre-heated oven (200ºC) for 5-6 minutes.
Step 10Remove from the oven and serve with a strong coffee.

- 2 Country Range Mature Cheddar Cheese Slices
- 5 g Country Range Butter
- 3 Country Range Free Range Medium Eggs
- 100 g pancetta
- 0.5 tsp salt
- 0.5 tsp pepper
