Step 1Add sufficient cold water to the soup to make a smooth paste, blend in the remaining cold water and bring to the boil.
Step 2Reduce the heat, cover the pan and simmer gently for 5 minutes, stirring occasionally.
Step 3Finely dice the chilli, removing the seeds, and crush the garlic. Heat a small amount of oil in a pan and fry gently for 2 minutes.
Step 4Stir in the soup with the sweetcorn and rice, heat thoroughly.
- 150 g Country Range Thick Chicken Soup Mix
- 3 pts cold water
- 1 small red chilli
- 2 cloves
- 100 g sweetcorn
- 100 g wild rice, cooked
- lime wedges for garnish
