Step 1Sauté the onion and garlic in a little oil until soft.
Step 2Add sufficient cold water to the soup mix to make a smooth paste, add the remaining cold water. Add the onion and garlic and bring to the boil. Simmer gently for 10 minutes stirring occasionally. Leave to cool.
Step 3Add all the remaining ingredients and liquidize to a smooth purée.
Step 4eason to taste and chill for 3-4 hours.
- 1 onion, chopped
- 4 cloves garlic, crushed
- 150 g Country Range Tomato Soup Mix
- 3 pts cold water
- 1/2 cucumber, peeled and diced
- 1 green pepper, diced
- 2 tbsp Country Range Tomato Paste
- 2 tbsp parsley, chopped
- 1 lemon, juice only
