- g Country Range Honey
- g Country Range Chopped Walnuts
- g Country Range Chopped Apricots
- g Country Range Chopped Dates
- g Country Range Raisins (optional)
- tbsp mixed seeds like pumpkin, sunflower, pinenuts
- g soft butter softened
- large eggs
- g natural yogurt
- tbsp Milk
- g Self Raising Flour
- tsp baking powder
- tsp bicarbonate of soda

Step 1
Heat oven to 180C/160C fan/ and line a 12-hole muffin tin with paper cases. -

Beat the butter and honey together until pale and fluffy. -

Combine the flour, baking powder and bicarbonate of soda together -

Add the eggs 1 by 1 and beat into the butter and sugar mix with 1 spoonful of flour each time you add an egg -

Add the yogurt and milk. -

Add the remaining flour mix and fold in all the chopped fruit and nuts -

Evenly divide the mixture between the muffin cases, sprinkle with the seeds and Bake for 15-18 mins -

Check they’re cooked by inserting a cocktail stick inserted into the centre and if it comes out clean they are done. If not give it a few more mins and try again
