Mole Poblano

A rich and deeply flavoured classic of Mexican cuisine, Mole Poblano is a celebration of bold ingredients and time-honoured techniques. Combining a complex blend of dried chillies, warming spices, nuts, seeds and a hint of chocolate, this iconic sauce delivers a perfectly balanced profile of smoky, sweet and savoury notes. Traditionally slow-cooked to develop its depth, it’s most often served with tender meat and finished with a sprinkle of sesame seeds.

Ingredients

Increase Portion Size

  •   tsp Country Range Crushed Coriander
  •   Country Range Cinnamon Stick
  •   tsp Country Range Oregano
  •   tsp Country Range Crushed Chillies
  • g Country Range Multi-use Tomato Sauce
  •   tsp Country Range Sesame Seeds
  •   skin on chicken thighs
  • ml olive oil
  •   diced red pepper
  •   sliced cloves of garlic
  •   halved small shallots
  •   cloves of garlic
  •   ltr chicken stock
  • g 70% dark chocolate
  •   small bunch chopped coriander
  • g sliced red chilies

    Step 1

    Brown the chicken thighs with veg oil in a large heavy bottom sauce pan, remove the chicken and keep to one side
  • 2

    Step 2

    Add the spices and fry for 30 seconds to release the flavour
  • 3

    Add the diced red pepper, shallots and garlic and fry for a few minutes until they are a little golden
  • 4

    Step 4

    Add the multi use tomato sauce and chicken stock and simmer for 10 mins
  • 5

    Add the chicken back into the pan with the sliced chillies and chopped coriander and simmer for another 30 mins
  • 6

    Step 6

    Once the chicken is cooked remove from the heat and stir in the chocolate until its fully melted
  • 7

    Serve with rice and sprinkle with sesame seeds
