Ingredients

Increase Portion Size

  • g Signature by Country Range Double Crunch Fries
  • g Country Range Bay Leaf
  • g Fresh mussels
  • g Butter
  •   Sliced shallot
  •   Sliced clove garlic
  •   Sliced stick of celery
  • ml White wine
  • ml Double cream
  •   pinch Fresh thyme
  •   pinch Fresh parsley

    Step 1

    Clean the mussels under cold water and remove any mussels that are open or smell bad
  • 2

    Step 2

    Gently fry the shallot, garlic, celery, thyme, bay leaf and parsley in butter in a large saucepan
  • 3

    Step 3

    Add the mussels and the wine and place the lid on top to steam the mussels for 2 mins
  • 4

    Step 4

    Add the cream and once it has come to the boil and all the mussels are open, place in a large serving bowl
  • 5

    Step 5

    Fry the double crunch fries and serve with the mussels
