Ingredients
Increase Portion Size
- g Signature by Country Range Double Crunch Fries
- g Country Range Bay Leaf
- g Fresh mussels
- g Butter
- Sliced shallot
- Sliced clove garlic
- Sliced stick of celery
- ml White wine
- ml Double cream
- pinch Fresh thyme
- pinch Fresh parsley

Step 1
Clean the mussels under cold water and remove any mussels that are open or smell bad -

Step 2
Gently fry the shallot, garlic, celery, thyme, bay leaf and parsley in butter in a large saucepan -

Step 3
Add the mussels and the wine and place the lid on top to steam the mussels for 2 mins -

Step 4
Add the cream and once it has come to the boil and all the mussels are open, place in a large serving bowl -

Step 5
Fry the double crunch fries and serve with the mussels
