  • 100 g Country Range Frozen Mashed Potato
  • 20 g Country Range Plain Flour
  • 25 g Country Range Salted Butter
  • 1 spring onion
  • 1 Country Range Free Range Medium Egg
  • sliced smoked salmon
  • 2 lemon wedges

Method

    Step 1

    Cook the mash as per instructions and mix with an egg, flour and sliced spring onion.

    Step 2

    Split the mix into 4 balls and press to form 4 cakes.

    Step 3

    Heat the butter in a pan and fry the potato cakes until golden on each side.

    Step 4

    Serve warm with a dollop of cream cheese and a wedge of lemon.
