Potato Cakes with Smoked Salmon and Cream Cheese
Brunching is becoming the new norm! Why not rustle up this tasty potato cakes served with smoked salmon and cream cheese.
Step 1Cook the mash as per instructions and mix with an egg, flour and sliced spring onion.
Step 2Split the mix into 4 balls and press to form 4 cakes.
Step 3Heat the butter in a pan and fry the potato cakes until golden on each side.
Step 4Serve warm with a dollop of cream cheese and a wedge of lemon.

- 20 g Country Range Plain Flour
- 25 g Country Range Salted Butter
- 1 spring onion
- 1 Country Range Free Range Medium Egg
- sliced smoked salmon
- 2 lemon wedges
