Step 1Dice the sponge and mix with the frozen raspberries.
Step 2Spoon mixture in to a trifle dish and drizzle with sherry.
Step 3Top with custard then allow to chill.
Step 4Whip the cream and pipe on top of the custard.
Step 5Decorate with fresh fruit and festive sprinkles.

- 100 ml good quality sherry
