Roast Turkey Stock

Ingredients
Increase Portion Size
- tsp Country Range Peppercorns
- roast turkey carcass cut into small pieces
- bulb garlic
- carrots
- onion
- sticks of celery
- small leek
- bay leaves
- tsp sage
- tsp thyme
- small bunch parsley
- tsp salt
- ltr water

Step 1
Place all of the washed chopped vegetables and turkey carcass pieces n a large saucepan and add the water and herbs -

Slowly bring to a simmer, skimming any fat or impurities and gently simmer for 2 hours -

Allow to cool for 30 mins and pass through a fine sieve -

A perfect way to use all of the turkey. This stock can now be frozen in batches for soups, sauces and stews.
