Salmon, Pea and Mint Courgette Tagliatelle

  • 1 Country Range Salmon Fillet portion
  • 1 tsp Country Range Blackened Cajun Seasoning
  • 1 courgette
  • 25 g Country Range Peas
  • 25 g soya beans
  • 2 spring onions
  • chopped mint
  • 1 tbsp Country Range Lemon Juice
  • 2 tbsp olive oil

Method

    Step 1

    Peel the courgette into ribbons.

    Step 2

    Add the salt, olive oil and lemon.
  • 3

    Step 3

    Add the sliced spring onions, chopped mint, soya beans and peas.
  • 4

    Step 4

    Leave to marinate for 10 minutes.

    Step 5

    Sprinkle the salmon with Cajun seasoning and cook until still pink (about 8 minutes).

    Step 6

    Serve the courgette mix in a bowl keeping the juices to one side.

    Step 7

    Flake the salmon on top and then dress with the juices.
