Sausage and Butterbean Casserole

  • 25 ml Pomace Oil
  • 8 Cooked Sliced Sausages
  • 1 Crushed Clove of Garlic
  • 200 g Chopped Tomatoes
  • 1 Diced Onion
  • 1 Diced Red Pepper
  • 100 g Diced Butternut Squash
  • 1 tsp Oregano
  • 0.5 tsp Smoked Paprika
  • 200 g Butter Beans
  • 0.5 tsp Salt
  • 1 tbsp Chopped Parsley

Method

    Step 1

    Cook the onions, peppers, butternut squash and sliced cooked sausages in a large pan in pomace oil until the vegetables start to soften
  • 2

    Step 2

    Add the chopped garlic, smoked paprika, oregano and chopped tomatoes and simmer for 5 mins
  • 3

    Step 3

    Add the butterbeans and simmer for a further 10 mins and season with salt
  • 4

    Step 4

    Add a little water if the mix is too dry
  • 5

    Step 5

    Finish with chopped parsley
