Stuffed Parathas

A comforting and flavour-packed stuffed paratha, made with soft, freshly prepared dough encasing a warmly spiced vegetable filling. Each flatbread is carefully rolled and filled before being pan-cooked until golden, creating a lightly crisp exterior with a tender, satisfying centre. Fragrant spices and herbs run throughout, delivering a gentle heat and depth of flavour, while the rustic texture makes it perfect for sharing or enjoying as a hearty snack or accompaniment.

Ingredients

Increase Portion Size

  •   Signature by Country Range Doughball (defrosted)
  • g Signature by Country Range Mashed Potatoes
  • g Country Range Fancy Peas
  • g Country Range Madras Sauce
  •   Country Range Bay Leaf
  • ml olive oil
  •   small diced onion
  • g diced green beans
  •   crushed clove garlic
  •   tsp cumin seeds
  •   tsp crushed coriander seeds
  • g butter
  •   pinch salt & pepper to taste

    Step 1

    Pre heat the oven to 200c / 180c fan

    Prove the dough ball and cut into 8 even sized pieces
  • 3

    Step 3

    Fry the spices, garlic and vegetables for 5 mins until soft and add the madras sauce, simmer for 5 mins and allow to cool
  • 4

    Add the vegetable mix to the defrosted potato mash, season to taste and mix well.

    Gently roll out a piece of dough and place a teaspoon of potato mash mix in the middle

    Pinch all of the edges of dough together until the potato filling is totally enclosed

    Gently flatten and repeat until all of parathas have been made

    Dry fry each one in a nonstick frying pan for 1 min each side then place onto an oven tray
  • 9

    Place a knob of butter and a clove of garlic on each paratha, sprinkle with cumin and nigella seeds and bake in the oven for 3 mins

    Serve with a mint yoghurt
