Vegetable Tikka Kebab

8 Total- 25 g Country Range Tikka Curry Paste
- 25 g Country Range Natural Yogurt
- 25 ml Country Range Extended Life Vegetable Oil
- 50 g sweet potato
- ½ red onion
- ½ green pepper
- 6 button mushrooms
- 4 wooden skewers

Step 1
Peel and dice the sweet potato into 3cm squares and steam for 5 minutes. -

Cut the pepper and red onion into 3cm squares and wash the mushrooms. -

Marinate all the vegetables in yogurt and tikka paste for 2 hours. -

Step 4
Place the vegetables on skewers as follows; sweet potato, pepper, mushroom and repeat again. -

Cook on an oiled tray in a hot oven at 220oC for 6-8 minutes. -

Step 6
Serve with Country Range Easy Cook Basmati Rice and Country Range Mango Chutney.
