Step 1Peel and dice the sweet potato into 3cm squares and steam for 5 minutes.
Step 2Cut the pepper and red onion into 3cm squares and wash the mushrooms.
Step 3Marinate all the vegetables in yogurt and tikka paste for 2 hours.
Step 4Place the vegetables on skewers as follows; sweet potato, pepper, mushroom and repeat again.
Step 5Cook on an oiled tray in a hot oven at 220oC for 6-8 minutes.
Step 6Serve with Country Range Easy Cook Basmati Rice and Country Range Mango Chutney.

- 25 g Country Range Natural Yogurt
- 25 ml Country Range Extended Life Vegetable Oil
- 50 g sweet potato
- ½ red onion
- ½ green pepper
- 6 button mushrooms
