Welsh Rarebit
A true British classic with a bold twist—our Welsh Rarebit is comfort food at its finest. This rich, savoury dish features a silky, beer-infused cheese sauce, seasoned with mustard and a hint of spice, generously poured over toasted artisan bread and grilled until bubbling and golden. It’s hearty, nostalgic, and unapologetically indulgent, offering layers of deep flavour in every bite.

Ingredients
Increase Portion Size
- g Signature by Country Range Mature Cheddar, Grated
- tsp Country Range English Mustard
- g Country Range Plain Flour
- g butter
- ml ale or Guinness
- tbsp Worcestershire sauce
- slices sourdough bread
- tsp Chopped chives
- drops Tabasco
- egg yolk
- pinch salt & pepper to taste

Step 1
Pre heat the oven to 200c / 180c fan -

Melt the butter in a pan and add the flour to make a roux -

Add the beer slowly and whisk until smooth -

Remove from the heat and whisk in the cheddar, mustard, Worcestershire sauce and Tabasco until smooth -

Whisk in the egg yolk and allow the mix to cool -

Spread the mix onto bread and top with a little more grated cheese -

Bake in the oven for 12 mins until golden and add the chopped chives -

Serve with salad
