- Country Range Salmon Fillets
- tbsp Country Range Blackened Cajun Seasoning
- g butter
- tbsp Veg oil
- Sliced lime
- Sliced shallot
- ml White wine (optional)
- ml Double cream
- sprig thyme
- Bay leaves
- Salt and pepper

Step 1
Sprinkle the cajun spice all over the salmon portions -

Step 2
Gently fry the salmon in the veg oil and butter for 4 mins on one side -

Step 3
Add the sliced shallots, bay leaf and time and turn the salmon and continue to cook for 2 mins -

Step 4
Add the white wine and sliced lime and reduce by half -

Step 5
Add the cream and bring to the simmer -

Step 6
Remove from the heat and season to taste
