Blackened Cajun Salmon

Ingredients

Increase Portion Size

  •   Country Range Salmon Fillets
  •   tbsp Country Range Blackened Cajun Seasoning
  • g butter
  •   tbsp Veg oil
  •   Sliced lime
  •   Sliced shallot
  • ml White wine (optional)
  • ml Double cream
  •   sprig thyme
  •   Bay leaves
  •   Salt and pepper

    Step 1

    Sprinkle the cajun spice all over the salmon portions
  • 2

    Step 2

    Gently fry the salmon in the veg oil and butter for 4 mins on one side
  • 3

    Step 3

    Add the sliced shallots, bay leaf and time and turn the salmon and continue to cook for 2 mins
  • 4

    Step 4

    Add the white wine and sliced lime and reduce by half
  • 5

    Step 5

    Add the cream and bring to the simmer
  • 6

    Step 6

    Remove from the heat and season to taste
