Vanilla sponge soaked with sherry, layered with traditional fruit salad in clotted cream mousse and custard, encased in a vanilla sponge layer. Defrost under refrigeration (8C or below) for approximately 12 hours for the whole dessert.

Chocolate sponge sprayed with kirsch, topped with cherry compote and chocolate and cherry flavoured cheesecake. The cheesecake is finished with cream and chocolate curls and freeze-dried cherry dust. Defrost for approximately 6 hours or overnight in a refrigerator at 5C. Alternatively, remove the required number of slices on a plate at 5C for approximately 3 hours.
