Beef Stew with Dumplings

Nothing beats a good stew or casserole when it comes to comfort food in winter. It's rare that we see dumplings on menus these days, but these fluffy, suet-rich delights will satisfy the biggest appetite.

Ingredients

Stew

  • ml beef stock made from Country Range Beef Bouillon Powder
  • ml Country Range Red Cooking Wine
  • g Country Range Chopped Tomatoes
  •   tsp Country Range Dried Mixed Herbs
  •   whole Country Range Dried Bay Leaves
  •   whole Country Range Star Anise
  • ml vegetable oil
  •   diced onion
  •   diced celery stick
  •   diced carrot
  •   diced leek
  •   crushed garlic clove

Dumplings

  • g Country Range Suet Pastry Mix
  •   tsp Country Range Dried Mixed Herbs
  • ml water

    Step 1

    Fry the even sized pieces of diced beef in the hot oil until brown.
  • 2

    Step 2

    Add the vegetables and garlic and continue to cook for 2 minutes.
  • 3

    Step 3

    Add the red wine and reduce by half.
  • 4

    Step 4

    Add the pre-made beef stock and chopped tomatoes.
  • 5

    Step 5

    Add the mixed herbs, bay leaf and star anise.

    Simmer low and slow for 2.5 hours.

    Prepare the suet mix as per pack instructions and shape into 8 even sized dumplings.

    Add the dumplings to the beef stew and cover the saucepan for 20/30 minutes until the dumplings are cooked.

    Season to taste and serve with greens.
