Increase Portion Size
- g Country Range Chick Peas
- ml Country Range Tomato and Basil Sauce
- tbsp Country Range Crushed Chillies
- ml Vegetable Oil
- Diced red onion
- Diced red pepper
- Crushed cloves of garlic
- Diced courgette
- Diced aubergine
- Salt and pepper to taste
- Torn Basil leaves
- g Parmesan grated

Step 1
Gently fry the diced red onion and pepper in the veg oil until soft for 5 mins -

Step 2
Add the chick peas and continue to gently fry for 2 mins -

Step 3
Add the courgette, aubergine, garlic, chilli flakes and oregano and gently fry for 5 mins -

Step 4
Add the tomato and basil sauce and simmer for 15 mins -

Step 5
Season to taste and scatter with torn basil leaves and grated parmesan
