Chickpea Minestrone

Ingredients

Increase Portion Size

  • g Country Range Chick Peas
  • ml Country Range Tomato and Basil Sauce
  •   tbsp Country Range Crushed Chillies
  • ml Vegetable Oil
  •   Diced red onion
  •   Diced red pepper
  •   Crushed cloves of garlic
  •   Diced courgette
  •   Diced aubergine
  •   Salt and pepper to taste
  •   Torn Basil leaves
  • g Parmesan grated

    Step 1

    Gently fry the diced red onion and pepper in the veg oil until soft for 5 mins
  • 2

    Step 2

    Add the chick peas and continue to gently fry for 2 mins
  • 3

    Step 3

    Add the courgette, aubergine, garlic, chilli flakes and oregano and gently fry for 5 mins
  • 4

    Step 4

    Add the tomato and basil sauce and simmer for 15 mins
  • 5

    Step 5

    Season to taste and scatter with torn basil leaves and grated parmesan
