Step 1Mix the soup mix with the 250ml cold water into a paste.
Step 2Bring the 550ml cold water to the boil and add the soup paste. Cover pan and gently simmer for 5 minutes.
Step 3Add the leeks and carrot to the olive oil and cook for 10 minutes, stirring often. Remove from heat and blitz in a blender.
Step 4Add the noodles to the soup mixture and bring to the boil.
Step 5Add the leek and carrot mix and simmer for a further 5 minutes.
Step 6Season and garnish with mint leaves or parsley.
