Chicken Noodle Soup

  • 68 g Country Range Chicken Soup Mix
  • 250 ml cold water
  • 550 ml cold water
  • 1 large leek, sliced
  • 1 carrot, sliced
  • 2 tbsp olive oil

Method

    Step 1

    Mix the soup mix with the 250ml cold water into a paste.

    Step 2

    Bring the 550ml cold water to the boil and add the soup paste. Cover pan and gently simmer for 5 minutes.

    Step 3

    Add the leeks and carrot to the olive oil and cook for 10 minutes, stirring often. Remove from heat and blitz in a blender.

    Step 4

    Add the noodles to the soup mixture and bring to the boil.

    Step 5

    Add the leek and carrot mix and simmer for a further 5 minutes.

    Step 6

    Season and garnish with mint leaves or parsley.
