Crispy Gherkin and Cheddar Bar Bites

  • 24 Country Range Sliced Gherkins
  • 4 Country Range Mature Cheddar Cheese Slices
  • 50 g Plain Flour
  • 2 Eggs
  • 75 g Country Range Panko Breadcrumbs
  • 1 tsp Country Range Smoked Paprika
  • Season to taste

Method

    Step 1

    Select 24 even sized gherkin slices and pat dry
  • 2

    Step 2

    Place 2 cheddar slices on top of the other 2 and cut into even sized squares which are the same size as the gherkins.

    Step 3

    Sandwich the cheddar between the 2 gherkin slices until you have 12 gherkin and cheddar pieces

    Step 4

    In three separate bowls place the flour in one, the beaten egg in one and the panko breadcrumbs in the last
  • 5

    Step 5

    Pass each cheesy gherkin through flour, then egg then bread-crumbs, then repeat so they are “double dipped”

    Once you have coated all 12 let them sit for a few minutes to set
  • 7

    Step 7

    Deep fry in oil for 2/3 mins until golden or drizzle with oil and bake in a 250oC hot oven for 6 mins.

    Serve immediately with a dip of your choice
