Step 1Select 24 even sized gherkin slices and pat dry
Step 2Place 2 cheddar slices on top of the other 2 and cut into even sized squares which are the same size as the gherkins.
Step 3Sandwich the cheddar between the 2 gherkin slices until you have 12 gherkin and cheddar pieces
Step 4In three separate bowls place the flour in one, the beaten egg in one and the panko breadcrumbs in the last
Step 5Pass each cheesy gherkin through flour, then egg then bread-crumbs, then repeat so they are “double dipped”
Step 6Once you have coated all 12 let them sit for a few minutes to set
Step 7Deep fry in oil for 2/3 mins until golden or drizzle with oil and bake in a 250oC hot oven for 6 mins.
Step 8Serve immediately with a dip of your choice

- 50 g Plain Flour
- 2 Eggs
- 75 g Country Range Panko Breadcrumbs
- 1 tsp Country Range Smoked Paprika
