Pesto Chicken Stew with Dumplings

This pesto chicken stew with dumplings is a warming, flavour-packed one-pot dish that’s perfect for comforting meals. Tender chicken is gently simmered with smoky bacon, leeks, onions and celery in a rich white wine and chicken stock sauce, creating a hearty and satisfying base. Sun-dried tomatoes, peas and fragrant basil pesto bring a burst of colour and fresh, savoury flavour, while soft dumplings made with Parmesan bake on top until golden and fluffy, soaking up the delicious sauce beneath.

Ingredients

Increase Portion Size

  •   whole chicken cut into saute pieces
  • ml vegetable oil
  •   small diced onion small diced onion
  •   small diced carrot small diced carrot
  •   stick of diced celery stick of diced celery
  •   sliced small leek sliced small leek
  • ml Country Range Red Cooking Wine
  • ml Chicken stock
  •   tsp Country Range Dried Mixed Herbs
  •   Country Range Dried Bay Leaves
  • g Country Range Green Pestopesto
  •   pinch salt & pepper - season to taste
  • g suet mix

    Step 1

    Pre heat the oven to 170c / 150c fan
  • 2

    Step 2

    Prepare the suet mix into dumplings as per pack instructions and keep to 1 side
  • 3

    Brown the chicken pieces in hot oil and remove from the large pan
  • 4

    Add the diced veg and continue fry
  • 5

    Add the chicken back in to the pan and season with a little salt and pepper
  • 6

    Add the red wine, mixed herbs, bay leaf, chicken stock and simmer for 45 mins in the oven
  • 7

    Add the small dumplings and continue to cook for 15 mins

    Once the stock has reduced add the pesto sauce and serve
