Poke Bowl

A lively twist on the classic poke bowl — this dish layers fragrant basmati rice with tender slices of cooked chicken, draped in a creamy, fiery piri piri mayo that packs just the right amount of heat. The real star, though, is the homemade pickled veg: a crisp, tangy medley of carrots, radishes, cucumber, and cabbage steeped in a fragrant vinegar brine of shallots, garlic, coriander seed, and a hint of chilli.

Pickle Marinade

  •   pinch Country Range Crushed Chillies
  •   Country Range Bay Leaf
  •   pinch Country range Mixed Herbs
  • ml white wine vinegar
  • g caster sugar
  •   shallot, sliced
  •   clove garlic, sliced
  •   tsp coriander seeds
  •   tsp salt

  • g Country Range Basmati Rice
  • g Country Range Mayonnaise
  • g Country Range Peri Peri Sauce
  •   cooked chicken breast, sliced
  •   tsp shredded spring onions
  •   tbsp pickled carrot
  •   tbsp pickled radish
  •   pickled cabbage
  •   slices pickled cucumber
  •   tsp Chopped fresh coriander, parsley and dill
  •   lime slices

    Step 1

    To make the pickled veg - combine all the pickle marinade ingredients and bring to the boil, add the washed and cooked vegetable of your choice and allow to cool in the liquid. Store for up to 1 week

    To make the spicy sauce – combine the mayo and piri piri sauce and keep to 1 side

    To make the poke bowl – add 50g cooked basmati rice topped with 1 sliced cooked chicken breast.

    Spoon over the spicy sauce and arrange a selection of pickled vegetables.

    Garnish with lime, chopped herbs and spring onions
