Step 1Peel the courgette into ribbons.
Step 2Add the salt, olive oil and lemon.
Step 3Add the sliced spring onions, chopped mint, soya beans and peas.
Step 4Leave to marinate for 10 minutes.
Step 5Sprinkle the salmon with Cajun seasoning and cook until still pink (about 8 minutes).
Step 6Serve the courgette mix in a bowl keeping the juices to one side.
Step 7Flake the salmon on top and then dress with the juices.
- 1 Country Range Salmon Fillet portion
- 1 tsp Country Range Blackened Cajun Seasoning
- 1 courgette
- 25 g Country Range Peas
- 25 g soya beans
- 2 spring onions
- chopped mint
- 1 tbsp Country Range Lemon Juice
- 2 tbsp olive oil
