Ingredients
9 Total- 1 Country Range Salmon Fillet portion
- 1 tsp Country Range Blackened Cajun Seasoning
- 1 courgette
- 25 g Country Range Peas
- 25 g soya beans
- 2 spring onions
- chopped mint
- 1 tbsp Country Range Lemon Juice
- 2 tbsp olive oil

Step 1
Peel the courgette into ribbons. -

Add the salt, olive oil and lemon. -

Add the sliced spring onions, chopped mint, soya beans and peas. -

Leave to marinate for 10 minutes. -

Sprinkle the salmon with Cajun seasoning and cook until still pink (about 8 minutes). -

Serve the courgette mix in a bowl keeping the juices to one side. -

Flake the salmon on top and then dress with the juices.
