Signature Ice Cream Neapolitan Terrine

  • 250 g Signature by Country Range Vanilla Ice Cream
  • 250 g Signature by Country Range Chocolate Ice Cream
  • 250 g Signature by Country Range Strawberry Ice Cream
  • 100 g dark chocolate

    Step 1

    Melt 2/3rds of the chocolate in a baine marie to 40c.

    Step 2

    Add the remaining chocolate and stir until the chocolate has cooled to 30c. The chocolate is now tempered
  • 3

    Step 3

    Press the strawberry ice cream into the bottom of the terrine mould and then brush with 1/3 of the melted chocolate and place in the freezer for 20 mins
  • 4

    Step 4

    Now press the vanilla ice-cream to form the next layer and brush with more melted chocolate and freeze for another 20 mins
  • 5

    Step 5

    Finish with the last layer of chocolate ice cream and freeze for 1 hour.

    Step 6

    Sliced and served with a spoonful of seasonal fruit.
