Signature Rhubarb Ripple Ice Cream

Ingredients

Increase Portion Size

  • g Signature by Country Range Dairy Vanilla Ice Cream
  • g diced new season forced rhubarb (or tinned rhubarb)
  • g jam sugar
  •   orange (juiced & zested)

    Step 1

    Mix together the diced washed rhubarb, sugar, orange juice and zest and leave to marinated for 30 mins
  • 2

    Step 2

    Place the rhubarb mix including all the juices into a thick bottomed sauce pan and stir over a low heat until all the sugar has melted
  • 3

    Step 3

    Bring to a simmer for 30 mins until the jam mix has reduced by half
  • 4

    Step 4

    Cool in a sanitised jam jar and keep in the refrigerator

    Step 5

    Once cold carefully ripple with some soft signature vanilla ice cream and place back into the freezer for 1 hour
