- ml water
- tsp salt

- g Country Range Chopped Tomatoes
- tsp Country Range Mixed Herbs
- Country Range Star Anise
- ml vegetable oil
- g diced chuck steak
- diced onion
- diced stick celery
- diced carrot
- diced small leek
- crushed clove garlic
- ltr beef stock
- ml red wine
- bay leaf

Suet mix

Step 1
Carefully bring together the suet mix, water, salt and herbs to form a dough and let it rest in the fridge for 30 mins -

Cut the pastry into 2 pieces of 2/3 and 1/3 of the mix, then roll out to 1cm thick. -

Line a buttered pudding bowl with the largest piece and keep the other past for the lid
Steak mix

Step 1
Fry the even sized pieces of diced beef in the hot oil until brown -

Add the vegetables and garlic and continue to cook for 2 mins -

Add the red wine and reduce by half -

Add the pre-made beef stock and chopped tomatoes -

Add the mixed herbs, bay leaf and star anise -

Simmer low and slow for 2 hours and cool
Steak Pudding

Step 1
Fill the Pudding basin with the cold beef mix and then top with the pastry lid, Crimp the edges and trim the excess pastry -

Place a few holes I the top to allow the steam to release and loosely wrap with parchment and tin foil. This will allow the pastry to rise a little -

Steam in the oven for 1 hour then remove the parchment and bake at 160c for 30 mins to colour the pudding
