Tomato and Lentil Soup

Method

    Step 1

    Mix sufficient water with the tomato soup mix to make a smooth paste, blend in the remaining cold water, lentils and thyme.
  • 2

    Step 2

    Bring to the boil, reduce the heat and simmer gently for 20 minutes until the lentils have softened. Stir occasionally to prevent sticking.

    Step 3

    Serve hot, in deep bowls garnished with crispy bacon.

  • 1 tbsp thyme, chopped
  • crispy strips of bacon to garnish
