Butternut Squash with Feta

Roasted butternut squash with feta is a simple yet flavourful dish that brings together sweet, caramelised squash and creamy, tangy cheese for a perfectly balanced finish. The squash roasts until tender and lightly golden, enhancing its natural sweetness, while crumbled feta adds a salty contrast and rich, savoury depth. Often finished with herbs, a drizzle of oil or a touch of acidity, it works equally well as a vibrant side or a light main, offering warmth, colour and a satisfying mix of textures.

Ingredients

Increase Portion Size

  •   Butternut squash split lengthways
  • ml Olive oil
  •   Lemon juice
  • g feta
  •   Red onion finely sliced
  •   Cherry tomatoes cut into qtrs
  •   tbsp Country Range Sriracha Seasoning

    Step 1

    Pre heat the oven to 190c/ 170c fan
  • 2

    Step 2

    Split the butternut squash in half, remove the seeds and drizzle some olive oil over
  • 3

    Step 3

    Season with lots of sriracha seasoning and bake in the oven for 25/30 mins or until the flesh is tender
  • 4

    Step 4

    To make the salad – mix together the crumbled feta, finely sliced red onion, qtr’d cherry tomatoes, lemon juice and 50ml of olive oil

    Step 5

    Fill the squash holes with the salad and serve
